Alexa Kath | KCEO Class of 2020-2021
A dream to provide affirming and inspirational messages on t-shirts and sweatshirts to empower women was lead by Alexa Kath to establish the online clothing brand Shine Co. Graphics. In 2022, Alexa entered and won the nationwide Bubbl'r contest called BoostYourFuture to help boost young entrepreneurs like Alexa. She was awarded $10,000 to help invest in growing Shine Co. Alexa attended Winona State University and received a B.S. degree in elementary education with an emphasis on Early Childhood Education.
The Schimmy Shack
Levi Schimschock | KCEO Class of 2017-2018
The Schimmy Shack took over as MinnWest Technology Campus' cafeteria provider in May 2023. He provides delicous and affordable meals so employees don't need to leave the campus. Levi coordinates the daily menu including sandwiches, fried foods, a hot food line, salad bar and baked goods. The Schimmy Shack also features a catering service.
